I notice a lot of your recipes say “freshly minced garlic”. Does this mean you don’t think it’s okay to use jarred? Mike R., Ocala, FL

Hi Mike!

Even though garlic can be a pain to peel and chop, you do want to always use fresh. To make things easier on yourself, I recommend buying the pre-peeled cloves you can find in a bag, especially if you use garlic a lot. You don’t want to buy minced garlic from a jar, because these varieties will have a really sharp tang (usually from citric acid) that doesn’t give you that fresh garlic taste that we Italians particularly swear by! Or, they’re chock full of oil adding unnecessary calories.

At the end of the day, shortcuts can obviously be really great but not if they cause you to sacrifice flavor or add fat and calories. Watch this short video where I explain why you should always use fresh garlic in your recipes!
