Chocolate Peanut Butter Balls

It’s no secret that I was a yo-yo dieter for years before I became a “weight-loss success story”. I always joked that I was so creative with food that I could turn anything “good” into something “bad”. When I first started making these chocolate peanut butter balls using a slightly different recipe, I got hooked and couldn’t stop eating them. So I’ve tweaked these slightly, swapping cocoa powder for carob powder because I like the chocolatey taste even better. I still absolutely love these, but I’m careful not to overdo it; I suggest you do the same.


Ingredients

1/2 cup + 2 tablespoons old-fashioned oats
2 tablespoons honey
2 tablespoons unsweetened cocoa powder
1 tablespoon unsweetened all-natural creamy peanut butter

Instructions

Add the oats, honey cocoa powder, and peanut butter to a medium mixing bowl. Using an electric mixer fitted with beaters, mix until well combined. Lay a large square of waxed paper on a cutting board or flat work surface. Using your hands, divide the mixture into 8 equal portions (the mixture will be sticky), and place on the paper. Roll each portion into a ball. Serve immediately or store on the countertop on a resealable plastic container for up to 3 days.

Makes 8 balls.
