20II

I didn't send a holiday note or card this year. But not because you matter less to me this year! In fact, I spent much of this year and the holiday season feeling grateful for YOU! Sure, like everyone, I faced challenges this year, but I still had my happiest, most content year ever and that does not happen without my family and friends, my team, and especially you all by my side in person and in spirit. But after making the December 20th deadline for the "The Biggest Loser International Cookbook," following the release of "The Biggest Loser Dessert Cookbook" on November 9th, and then Christmas shopping, buying ingredients for Christmas dinner… I was simply ready for "a long winter's nap." :) After two months of getting very little sleep, I just needed a break. So I took it. I know you'll forgive me. I trust that you know that my skipping the holiday card was only because I cared more about making sure each and every recipe in the new cookbook was given the TLC it needed and that will help you in the long run (even if that means that I don't launch another 3 cookbooks in the next 13 months).

And during my week off, as I watched 2010 become 2011, it occurred to me that 2011 looks a lot like 20II (as in "I" "I"). If that's not license to make this year the year of "I," I don't know what is! And I encourage you to embrace this too--NOT as a license to be selfish towards others but a license to be kind to yourself and make this year the year to conquer that "thing" that you've resolved to conquer once and for all! 20II: A giant, inescapable, daily (or even more frequent) reminder to do for you. No excuses. No holds barred.

Have you said for years that you'll lose weight? Have you promised to make more time for your children before they don't want to spend time with you? Have you wanted to change careers and let fear stop you? Have you resolved to do more volunteer work? Whatever it is -- and I know you have one (we all do!) -- let's make this year the year to do what it takes to achieve it – for YOURSELF. Not because someone tells you to, not because I told you to, but because you want to for you!

I know, beyond a shadow of a doubt, the one thing is that is missing in my life. I am going to do whatever I can to make 20II the year I get it! Note: In saying that, I understand that the perfectionist in me will have to take a back seat. (Gasp! Gasp! Gasp! Gasp!). It will, however, mean so many other wonderful things when I get what I've dreamt of for so long. So join me in doing everything you can to make your long-delayed resolution or dream come true. Join me in resolving that this is the year of I-I! "I Can! I Will!" Both "I's" important: The first "I" to believe it, the second to DO it!

If you haven't already seen her story on Dr. Oz, I'm sure you'll quickly agree that Jill Knapp is a role model for all of us. She went from diabetic obese mom to beauty pageant winner and now she's paying it forward by helping others. Needless to say, she had no lack of tips and tricks to share when asked what keeps her motivated:

"A big one for me was making a vision board. I would cut out little sayings, pictures of someone who was fit, a glass of water, a photo of healthy food."  Jill kept her vision board on the back of her closet door so she saw it every day as a reminder of what mattered and what she wanted more than anything. What happens now that she has achieved her vision? "I still have the same one up but now it has all come true. I am that fit healthy person!"

New Year, New…Baking Powder?

Baking PowderThe holiday baking season is behind us, so it's time to see if the "dust" should settle back into the cabinet or be thrown away. You know that baking powder increases volume and lightens the texture of your favorite baked goods and that it should be stored in a cool, dry place. But did you know that it only has a shelf life of 6-12 months? To check for freshness, pour 1 teaspoon into ½ cup hot water. The mixture should bubble and fizz immediately. If it doesn't, toss it or you might have more to blame than yourself for fallen cakes!

Mixed Berry Oatmeal

As the snow falls in most of the country, this oatmeal is a great warm-you-up snack (or breakfast, of course), to keep your family's resolutions on track without depravation!

For the other single girls (and guys!) out there, the oatmeal is reheat-friendly

3-1/2 cups water
2 cups old-fashioned oats
¼ teaspoon salt
2 cups frozen mixed berries, defrosted (not drained of their juice)
2 tablespoons agave nectar (you may need less or more depending on the sweetness your berries)
¾ teaspoon cinnamon


Bring the water to a rapid boil in a 3 quart saucepan over high heat. Add the oats and salt and reduce the heat to medium. Cook the oats about 5-7 minutes, stirring occasionally, until the liquid is almost removed. Cover the pan and remove from the heat. Allow it to sit 5-7 minutes, then stir in the berries, agave, and cinnamon until well combined. Divide among 4 serving bowls. Serve immediately

Makes 4 servings. Each serving has: 216 calories, 6 g protein, 43 g carbohydrates (14 g sugar), 3 g fat, <1 g saturated fat, 0 mg cholesterol, 6 g fiber, 145 mg sodium
